Ennai Kathrikaai / Stuffed Brinjal

Stuffed brinjals are very delicious and easy to prepare. The spice powder that enhances the taste will make even the haters love brinjal. I learnt this simple yet tasty recipe from my mom-in-law. Let's see the stuffed brinjals preparation.

Preparation time : 20 minutes
Cooking time : 15 miuntes
Serves - 3

Ingredients:

Brinjal - 15
Mustard seeds - 1/2 tsp (for seasoning)
Oil - as required

For spice powder:

Chana dal - 1 tsp
Coriander seeds - 1 tsp
Grated Coconut - 2 tbsp
Red chilli - 7
Curry leaves - few

Method:

Heat a pan, pour 1 tsp oil and roast all the ingredients mentioned under 'ingredients for spice powder'. Once done, add required salt and grind them to coarse powder.



Take small even sized brinjals and slit each one of them into 4 or 6 petals.



Stuff the spice powder into the brinjals.

Heat a pan, pour some oil and add mustard seeds. When mustard seeds splutter, add stuffed brinjals and sprinkle some salt on brinjals.



Sprinkle some water and cook on low flame till brinjals turn soft.

Tasty ennai kathrikaai is ready to serve!


Tips:
  • A variation of this recipe is ennai kathrikaai kuzhambu. Once brinjal is cooked, add tamarind extract, salt and some more amount of spice powder. Bring to boil till it attains kuzhambu consistency. Serve hot with rice.
  • This spice powder can be prepared and stored in advance to save time.
