Ivy Gourd Spicy Curry | கோவைக்காய் காரக்கறி | 3 Easy steps to make ivy gourd stir fry | Kundru curry

A delicious alternate to the usual kovaikaai curry in just 3 steps! Prepare the spice powder in advance so that you can make this curry quickly.
Ingredients:

Ivy gourd - 500 grams (chopped lengthwise / thin round slices)
Turmeric powder - 1/4 tsp
Salt - as required
Water - as required

For spice powder:

Coriander seeds - 1 tbsp
Chana dal - 1 tsp
Coconut - 2 tbsp
Red Chillies - 5

For seasoning:

Mustard seeds - 1/2 tsp
Urad dal - 1/2 tsp
Oil - as required
Hing - 1 pinch
Curry leaves - few

Method:

1) Heat little oil in a pan, add coriander seeds, chana dal, coconut & red chillies. Roast until they turn golden brown. Allow them to cool and grind them to a coarse powder in a mixie.

2) Heat oil in the pan, add mustard seeds, urad dal, hing & curry leaves. Once they splutter, add the kovaikaai.

3) Add turmeric powder, salt & the ground spice powder and mix well. Sprinkle some water and close the lid; cook for 15-20 minutes (keep stirring in between) or until the curry turns soft. Kovaikaai kara curry is ready to serve!
