Kadai Mixed Vegetable Gravy

This simple yet delicious mixed veg gravy can be made in a jiffy. Dear all working people there...pack this colorful, tasty gravy in your lunch box and surprise your colleagues! Cut and store the veggies in an air tight container the previous night. On a weekend, make the spice powder and store it. Now all you need to do is cutting and cooking the onions and tomatoes! Yumm yumm gravy will be ready in minutes! Let's see the preparation.

Cooking time : 20 minutes
Serves - 3

Ingredients:

Vegetables of your choice - 2 cups
Onions - 2
Tomatoes - 2
Ginger - 1 inch
Garlic - 5 cloves
Garam masala powder - 1/2 tsp
Kasuri methi - 1/2 tsp
Salt - as required
Water - as required
Oil - as required
Coriander leaves - for garnishing

For spice powder:

Coriander seeds - 1tbsp
Cumin seeds - 1 tsp
Red chillies - 6 (I have added 3 guntur red chillies and 3 kashmiri red chillies)

Method:

Dry roast the items 'for spice powder' and grind them to a coarse powder.

Roughly chop onions, tomatoes, ginger and garlic. Heat oil in a kadai, add ginger and garlic, saute them for few seconds. Then add onions and tomatoes and saute until they are soft. Allow them to cool and grind them into a fine paste.
Chop all the vegetables of your choice. I have added carrot, beans, capsicum and potato. You can also add cauliflower and green peas. Pressure cook them for one whistle. Do not overcook the veggies.
Heat the kadai, add the fine paste, spice powder, cooked vegetables and required salt and mix well. Cover the lid and cook for 5 minutes.
Now add garam masala powder and kasuri methi and mix well. Cook for 2 more minutes.

Switch off the flame. Garnish with coriander leaves and serve.
