Raw banana stir fry | வாழைக்காய் கறி

Quickest stir fry for a lazy Sunday lunch! Raw banana is very easy to cut and will be cooked within minutes.
Ingredients:

Raw banana - 3
Turmeric powder - 1/4 tsp
Red Chilli powder - 1/2 tsp
Coriander powder - 1 tsp
Salt - as required
Oil - 1 tbsp
Mustard seeds - 1/2 tsp
Urad dal - 1/2 tsp
Hing - a pinch
Curry leaves - few

Method:

Cut vazhaikaai into thin round slices. Put them in a bowl of water. Add a pinch of salt and close it with a lid and let it boil for 5-7 minutes. If you are able to pierce vazhaikaai with a knife easily, it means it's cooked. Remove from flame.
Heat oil, add mustard seeds, urad dal, hing and curry leaves. When they splutter, add turmeric-red chilli-coriander powders and required salt. Mix well.
Now add vazhaikaai and toss the pan until the masala completely coats the vazhaikaai on all sides.
Switch off the flame after 3 minutes. Vazhaikaai stir fry is ready!
