Raw Plantain Bajji | வாழைக்காய் பஜ்ஜி | Raw banana-Onion-Potato Bajji | வாழைக்காய்-வெங்காயம்-உருளைக்கிழங்கு பஜ்ஜி

When life gives vazhaikkaai, make 'bajji'. Period. What else you need on a rainy evening? Bajji+filter coffee = Heaven. Have a look at the bajjis and slurp away!
Ingredients:

Raw plantain - 2
Onion - 1
Potato - 1
Gram flour - 1 cup
Rice flour - 2 tbsp
Chilli powder - 1 tsp
Cooking soda - 2 pinches
Salt - as required
Water - as required
Oil - for deep frying

Method:

Peel and cut vazhaikkaai into thin long slices.
For bajji batter: Take a bowl and mix gram flour, rice flour, chilli powder, cooking soda & salt. Add required amount of water and mix well; there should be no lumps. The batter should not be too thick or too watery.
Heat oil in a kadai. Add a drop of bajji batter into oil; if it raises to the surface immediately, then oil is at the right temperature to fry bajjis.

Now take a slice of vazhaikkaai and dip it in the batter. Ensure the vazhaikkaai is coated with enough batter. Dip it gently into oil.
Fry both sides until golden brown and remove from oil.
Enjoy vazhaikkaai bajji with ketch up or coconut chutney (and also with filter coffee).

If there is excess bajji batter, don't worry. Peel and cut onion and potato into thin slices.

Dip them in bajji batter and fry in the oil. Onion bajji and potato bajji are also ready! Enjoy!
