Kadai paneer—the highpoint of all vegetarian foodies—is a very easy and tasty dish made with Indian cottage cheese/ paneer, onions and capsicum. I made this recipe by adding special 'kadai masala'. Let's see how to make this simple restaurant style recipe.
Ingredients:
Paneer - 200 grams (cut into cubes)
Capsicum - 1 big (cubed)
Onion - 1 big (chop into petals)
Garam masala powder - 1 tsp
Kasuri methi - 1 tsp
Salt - as required
Water - as required
Oil - 2.5 tbsp
For grinding:
Onion - 2 roughly chopped
Tomato - 2 roughly chopped
Turmeric powder - 1/2 tsp
Red chilli powder - 1/2 tsp
For 'kadai masala':
Coriander seeds - 2 tsp
Cumin seeds - 1 tsp
Pepper corns - 5
Red chillies - 4
Method:
Dry roast the items mentioned for 'kadai masala'. Let them cool and grind them to a coarse powder.
Add the ground onion-tomato paste; add required salt and water to adjust the consistency.
Add the 'kadai masala'. Mix well; close with lid and cook for 5 minutes.
Add garam masala and kasuri methi; mix well.
Add paneer cubes; mix well; cover and cook for 5 more minutes.

Note:
I have added guntur red chillies and kashmere red chillies for kadai masala. Instead, you can also add 1/2 tsp of kashmere red chilli powder while grinding the onion-tomato paste to get a beautiful color.

Heat 2 tsp oil in a kadai, add roughly chopped onion; saute for some time; then add tomato, turmeric powder and red chilli powder. Saute until tomato turns mushy. Allow the mixture to cool and grind them to a smooth paste.
In the same kadai, heat 2 tbsp of oil, add onion and capsicum; saute until onion becomes transparent.Add the ground onion-tomato paste; add required salt and water to adjust the consistency.
Add the 'kadai masala'. Mix well; close with lid and cook for 5 minutes.
Add garam masala and kasuri methi; mix well.
Add paneer cubes; mix well; cover and cook for 5 more minutes.
