Bombay Mast Tawa Pulao | Bombay Street Food


A great and easy twist to the humble one pot rice meal - Bombay Mast Tawa Pulao. Though this bombay street food is made in a big tawa, using leftover bhaji (made for pav bhaji), I made this recipe in a kadai. Yes...the bhaji is usually made with more of tomatoes; but I tried this recipe using pav bhaji masala and more vegetables. Do try this recipe and let me know your comment!

Ingredients:

For cooking rice:
Basmati rice - 3/4 cup
Bay leaf - 1

Veggies:
Vegetables of your choice (I have added beans, carrot and potato)
Onion - 1 finely chopped
Green chilli - 2 finely chopped
Ginger garlic paste - 1 tsp

For seasoning:
Oil - 2 tsp
Ghee - 1 tsp
Fennel seeds - 1 tsp

Spice powders:
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
Pav bhaji masala powder - 1 tbsp
Jeera powder - 1/2 tsp

Salt - as required
Coriander leaves - for garnishing

Method:
Chop vegetables of your choice and pressure cook them for 1 or 2 whistles. The veggies should not turn mushy.
Cook basmati rice with one bay leaf in a separate pot; Once done, drain excess water and discard the bay leaf.
Heat ghee and oil in a kadai, add fennel seeds, when they splutter, add ginger garlic paste and green chillies. Saute them for sometime and then add onion.

When onion becomes transparent, add cooked veggies.

Now add all spice powders, required salt and mix well.

Add cooked basmati rice. Using two spatulas, mix the rice gently.
Garnish with coriander leaves; Bombay Mast Tawa Pulav is ready!!!

  1. Tried this while traveling but substituted garam masala instead of pav bhaji masala and skipped fennel as those were what I had! Turned out well.
